College Cupcakes
Ingredients
1 c sugar1 stick margarine
1/2 c milk
1 egg
1/3 c cocoa
1/2 tsp soda
1 tsp baking powder
1/2 tsp salt
1 1/2 c sifted flour
1/2 c boiling water
Instructions
Combine ingredients and beat with electric mixer 3 minutes at medium speed. Pour in paper muffin cups (1/2 full) or well greased muffin tins. Bake @ 350 degrees for 25-30 minutes or until done.Icing:
Melt 5 tbsp butter or margarine. Remove from heat and add 3 oz cream cheese (at room temp) Stir in 1 1/2 to 2 cups powdered sugar, 1 tsp vanilla and 1 tbsp milk. may have to vary milk & sugar to get right consistency.
