Black Raspberry Pie
Ingredients
Crust:2 c flour
2/3 c lard
1/2 tsp salt
scant 2/3 c ice water
Filling:
4 c black raspberries
1/4 c flour
1 c sugar
2.tbsp lemon juice
2 tbsp butter
Instructions
Crust:Mix the flour and salt. Cut in the lard. Gradually add the ice water ntil the crust sticks together. Wrap in plastic wrap and place in the refrigerator for at least 2 hours to keep it cold. Divide the crust into two equal parts. roll out on section and place into a 9" pie pan.
Filling:
Mix berries, flour, lemon juice and sugar and pour into shell. Dot berry mixture with butter. Roll out remaining crust and place on top of the pie. Crimp the edges to seal. Brush pie top with milk and sprinkle with sugar. Bake about an hour at 350 degrees or until lightly browned and berries are bubbly.
