Chicken Parmesan Light

Ingredients
Four pieces skinless, boneless chicken breast, each about the size of a fist.1/2 c bread crumbs
Garlic salt
Pepper
1 egg
2-3 Tbsp oil
1/2 c fresh grated Parmesan cheese (I used some shredded Parmesan in a bag from Kraft)
Approx 8 fresh mushrooms, sliced or 1 can mushrooms stems and pieces
1/2 c wine
1 &1/2 c spaghetti sauce (I used traditional (Prego)
Motzarella cheese, shredded
Instructions
Pound chicken breast that have been placed in a plastic bag until about 1/2 " thick.Beat 1 egg in a bowl.
Dip chicken breast in the egg and then coat each side with bread crumbs to which you have added pepper and garlic salt to your taste.
Heat oil in skillet. Brown the chicken breasts. Remove most of the oil in the pan and sauté mushrooms with about 1/3 c wine until done and wine is absorb in mushrooms.
Place browned chicken breasts in a greased baking dish. Scatter sauted mushrooms over the chicken breasts. Pour spaghetti sauce this.
Cover with foil and bake about 30 minutes in 325 degree oven. Remove foil and sprinkle with motzarella cheese. Put back in oven for 10 minutes until cheese is melted.
To keep calories down, I serve with sliced fresh fruit. You could cook some whole wheat pasta and serve with this as well.
About 450 calories a serving.
