Tim’s Zuppa Toscana Soup
Tim brought this for our Christmas Eve dinner. Yummy.
An Olive Garden Favorite
Ingredients
1 lb Italian Sausage. (Tim used about a pound and a half of sausage)1 onion
3-5 cloves of garlic, minced
4 c chicken broth
1-2 c water - can add chicken bouillon to it also
Bag of spinach or 2 cups chopped kale
5 golden potatoes, peeled, cubed
2 c heavy cream
2-3 slices crumbled bacon
Parmesan cheese
Salt and pepper
Instructions
Brown sausage and put in separate dis, leaving the drippings in the panSauté onion and salt in grease, then add garlic and cook for 30 seconds. Add some chicken broth and scrape bottom of pot. The add rest of broth. Add back in sausage and diced potatoes. Then add bouillon water to desired consistency. Boil potatoes until soft but not mushy.
Add spinach, cook 5 minutes. Turn off heat and add heavy cream, bacon, and Parmesan cheese to taste. Salt and pepper.
