Chicken and Dumplings
Ingredients
1 whole chicken1 each carrot, celery stalk, onion
salt to taste
5-6 c defatted broth
1, 101/2 oz can cream of chicken soup
Instructions
Cook chicken with carrot, celery and onion until done. Add salt. Discard skin and bones. When cool, dice chicken. In a large pan or roaster add chicken, broth and soup. Thicken with corn starch or flour. Cook until desired thickness.Feather Dumplings:
2 c flour
1 tsp salt
4 tsp baking powder
1/4 tsp pepper
1 egg, beatten
3 tbsp butter, melted
2/3 c milk
Mix dry ingredients. Add egg, melted butter and enough milk to make a moist, stiff batter. Drop by teaspoon into hot chicken mixture.
Note: May cook on stove top, but I find it better if I bake them in the oven at 350 degrees for 20 minutes." You may use a small cookie scoop, instead of a teaspoon to measure dumpling.
