BBQ Hoedown Tacos (TOH teacher contest)
Ingredients
1 lb ground beef1 small onion, chopped
3.4 c BBQ Sauce
1 can chopped green chilies
1 tsp ground coriander
1 tsp ground cumin
1/2 tsp salt
2 cups angel hair coleslaw mix
1/4 c green goddess salad dressing
8 flour tortilla (6 in.), warmed
8 slices pepper jack cheese
Instructions
1. In a large nonstick skillet, cook beef and onion over medium heat until meat is no longer pink; drain. Stir in the BBQ sauce, chilies, coriander, cumin and salt. Bring to a boil. Reduce heat; simmer, uncovered, for 5-7 min. or until heated through.2. In a small bowl,combine coleslaw mix and salad dressing; toss to coat. On each toritlla, lover cheese, beef mixture and coleslaw; fold to close.
