Ingredients
4 half chicken breasts - skinless and boneless2 can Italian Style stewed tomatoes
2 tbsp cornstarch
1/2 tsp oregano or basil, crushed
1/4 tsp hot pepper sauce (optional)
1/4 c grated Parmesan cheese
Instructions
Place chicken in baking dish. Bake, covered 15 min in preheated 425 degree oven. Drain. Combine tomatoes, cornstarch, oregano. Cook, stirring constantly until sauce is thickened. Pour heated sauce over chicken; top w/cheese. Bake 10 min. uncovered. Garnish w/parsley.One whole chicken breast from Fareway with 1 can of tomatoes is plenty for Jim & I.
Serve with a salad and bread. Can serve over pasta.
