Macaroni Pea Salad
Ingredients
12 oz elbow macaroni, boiled and drained(I used large size macaroni)
1 can peas, drained (Keep some of the juice)
6 oz Cheddar Cheese, diced
1/4 c onion, chopped
1 stalk celery, diced
4-6 hard boiled eggs
2 large sweet pickles, chopped
1 1/3 c Miracle Whip salad dressing
Salt and Pepper to taste
Instructions
Mash 2-3 egg yolks and add salad dressing. Stir in pea juice and pickle juice (about 2-3 tbsp of each) Blend well and pour over macaroni and other ingredients. Chill. Before serving if salad is dry, add more salad dressing.Could add green pepper and pimentos if desired.
Another dressing for 6 cups of macaroni is:
1 1/3 c Miracle Whip
1 tbsp vinegar
1 1/2 tbsp sugar
1 tbsp mustard
