Chocolate Chip Oatmeal Cookies

Ingredients
1 c unsalted butter, at room temperature1 c light brown sugar, packed
1/2 c sugar
1 large egg, at room temperature
1 large egg yolk, at room temperature
1 tbsp vanilla
2 c all-purpose flour
1 c quick-cooking or old fashioned oats
1 tsp baking powder
1 tsp baking soda
1 tsp kosher salt or 3/4 tsp regular table salt
3 c semi sweet chocolate chips (I used one large pkg of chips, about 2 c)
Instructions
Lightly grease with nonstick vegetable oil spray or use parchment paper on baking sheet.Preheat oven to 325 degrees.
Beat together butter and sugars until smooth.
Add the egg, egg yolk and vanilla, one at a time, beating well after each.
Mix together flour, oats, baking powder, baking soda and salt. Add to the butter mixture. Mix everything thoroughly to incorporate.
Scrape bottom and sides of bowl and mix briefly.
Stir in chocolate chips.
Scoop dough onto baking sheet, leaving 1 1/2" to 2" between cookies.
Bake cookies for 12 - 15 minutes until they're a light golden brown with slightly darker edges. Their middles may still look a tiny bit shiny; that's ok, they'll continue to bake as they cool on the pan.
Remove cookies from the oven and as soon as they're set enough to handle, transfer them to racks to cool.
