Company Chicken Casserole
Ingredients
6 large chicken breasts
Celery leaves, tops
1 pkg frozen chopped broccoli
1 small pkg slivered almonds
sliced onion
carrot
1 pkg Pepperidge Fram herb stuffing
Sauce:
2 cans cream of chicken soup
1/2 tsp curry powder
1/2 c cheddar cheese (shredded)
3 tbsp sherry, vermouth or wine
1 c mayonnaise
1/2 tsp lemon juice
1/2 c milk
Instructions
Cook chicken in water with onions, celery, carrot until done. Remove meat from bone. Butter 9x 13" pan. Sprinkle half of stuffing on bottom, next put layer of broccoli, which has been cooked and drained, sprinkle with slivered almonds, then layer of chicken, using all of chicken. cover with sauce. Put remaining stuffing on top and sprinkle with more almonds and several dashed of butter. Bake at350 degrees for 30 minutes or until heated through and bubbly. Excellent. May substitute green beans or asparagus for brocooli. Serves 10-12.
