Apricot Bread
Ingredients
1 c dried apricots, chopped
2 eggs
1/4 oil
2/3 c sugar
1/3 c Splenda
2/3 c orange juice
2 c flour
2 tsp baking powder
1/4 tsp baking soda
1/4 tsp salt
Instructions
Cover chopped apricots completely with cold water and let stand at least an hour or until apricots have softened. Mix eggs, oil, sugar, Splenda and juice in a medium mixing bowl. Add drained apricots. Add remaining ingredients and mix until moistened (do not over mix). Pour into two medium baking Oran's andake 40-42 min at 350 degrees until toothpick comes out clean. Cool. Remove from pans and put in plastic bag. Refrigerate for several days or freeze for later use.
