Brunch Casserole
Ingredients
4 c cubed firm white bread1/4 c chopped onion
1 small can sliced mushrooms, drained
10 eggs (beaten)
1 tbsp chopped parsley
1 tsp salt
1/4 tsp pepper
8 oz (2c) shredded cheddar cheese
1/4 c chopped green pepper
1/2 c peeled and chopped tomatoes
4 c milk
1 tsp dry mustard
1/4 tsp onion powder
8-10 slices bacon (fried crisp, drained and crumbled
Instructions
Generously grease a 9x13" baking dish. Arrange cubes in bottom of dish. Layer cheese, onions, green pepper, mushrooms and tomatoes on top of bread. In a large bowl, combine eggs, milk, parsley, mustard, salt, onion powder and pepper. Mix well. Pour egg mixture over bread and sprinkle bacon evenly over the top. Cover and refrigerate overnight or up to 24 hours. Heat oven to 325 degrees and remove cover from dish. Bake 50-60 minutes until center is set. Allow to stand 5 minutes before serving.
