Rhubarb Crunch
Ingredients
1 c flour3/4 c oatmeal
1 tsp cinnamon
1/2 c butter, softened
1 c brown sugar
4 c diced rhubarb
1 c water
1 tsp vanilla
1 c sugar
2 tbsp corn starch
Instructions
Mix first five ingredients as for pie crust, leave in crumb form. Press half of crumb mixture into greased 9" square pan and cover with rhubarb.Combine water, vanilla, sugar and cor starch and cook until clear. Pour over rhubarb and top with remaining crumbs. Bake 40-45 minutes at 350 degrees.
