Using a 1954 Betty Crocker cookbook:Put sliced Cortland apples in saucepot, add 1 cup sugar and 4 tbsp cinnamon and cook apples (no water) about 5 minutes until gently softened, stirring constantly. Fill pie crust, dot apples with butter and sprinkle about 10 drops vanilla over them. Wipe top of crust with milk and sprinkle sugar and cinnamon. Pinch edges of crust and cut slits on top. Bake at 425 degrees for about 1/2 hour. Cooking down the apples a bit reduces baking time and you'll never get a hole between your crust and apples.
