Foil-Pack Taco Chicken
Low cal, quick and yummy
Ingredients
4-6 chicken breasts (I usually cut the breast in half, one half for each packet, especially if they are large breasts)Packet of dry taco seasoning
4-6 red potatoes, washed and thinly sliced
Taco or Mexican shredded cheese
Jar of salsa (I use Walmart brand Great Values black bean and corn salsa.)
Optional - green pepper slices, sliced mushrooms, fresh or canned, black olives, etc. can add if you choose
Preheat oven to 400 degrees.
1. Put chicken breasts on a plate and sprinkle the top with taco seasoning.
2. Roll off a two large piece of heavy duty aluminum foil for each piece of chicken breast. (Double wrap)
3. Spray one piece of foil on the shiny side with Pam.
4. Place pieces of red potatoes on the foil.
5. Place a chicken breast on top of potatoes.
6. Add optional sliced veggies if desired.
7. Add a couple of tablespoons of salsa on top.
8. Sprinkle with shredded cheese.
9. Close up packets carefully.
10. Place cookie sheet and put in the oven for 30-35 minutes.
11. Take out of oven and poke small hole in foil to release steam before opening.
12. Remove from oven and slide all out onto a plate.
13. Add a dollop of sour cream if desired.
Serve with a salad and a hard roll. Great dinner.
