Rhubarb Swirl
Ingredients
1, 3oz box strawberry Jell-O3 c diced rhubarb
3/4 c sugar
1 box instant vanilla pudding
1 1/2 c milk
1/4 tsp vanilla
8 oz Cool Whip
Graham Cracker Crust:
2 c graham creackers
1/3 c powdered sugar
1/2 c milted margarin
1/2 tsp cinnamon
Instructions
Pour sugar over rhubarb and set one hour. Put in saucepan and simmer until tender, 10-15 minutes. Pour in Jell-O and mix until dissolved. Set aside and cool until syrupy. Prepare pudding with milk and vanilla and add topping. Mix well. Pour rhubarb mix into pudding and gently swirl. Put into graham cracker crust after crust is chilled for one hour.Crust:
Mix together crackers, powdered sugar, margarine and cinnamon in a 9x13 " pan. Save 1/4 c crubs for topping. Chill one hour before adding rhubarb filling.
