Salsa Chicken
Ingredients
4 boneless, skinless chicken breasts1 1/2 to 2 cups white corn and black bean salsa (from Walmart)
4 tsp dry Taco Seasoning
shredded cheese
sour cream
Instructions
Sprinkle taco seasoning on both sides of each chicken breast or put seasoning in plastic bag and shake chicken breasts in the bag.Place chicken breasts in a lightly greased baking dish. (4 small breasts, I used an 8" square glass dish)
Spoon salsa over the top of each breast
Bake in 375 degree oven for 35 minutes or until juice is clear.
Remove from oven and sprinkle shredded cheese over each breast. (I used some sharp cheddar and some motzarella cheese. Put back in oven for 5 minutes.
Put a dollop of sour cream on each breast before serving.
Note: Increase or decrease amounts according to the size of your family.
I'm not a big mexican food eater but I loved this!
