Pineapple Upside Down Cake from Grandma Leona Pippert
Grandma and my mother always baked this in a cast iron skillet.
Ingredients
1/3 c butter3/4 c brown sugar
Cream & spread in bottom of med cast iron skillet or 8" square pan. Place drained pineapple rings or drained peaches or fresh peaches on top of butter/brown sugar mixture. Can also use marachino cherries in pineapple ring.
Cake:
3 eggs
1 c sugar
4 tbsp water
1 c flour
1 1/2 tsp baking powder
1/2 tsp salt
1 tsp vanilla
Instructions
Mix cake ingredients and pour over pineapple/peaches.Bake at 350 degrees until done. Test with tooth pick in center.
