Teresa's Vegetable beef Soup
This is what I use often.
Ingredients
Large soup bone or piece of roastAbout 4 cups of my frozen vegetable soup base
Beef stock as needed to cover meat for cooking.
1/2 - 1 cup chopped onion
1 c chopped celery
2 bay leaves
Cook until meat is done. Remove meat and cut meat in small pieces.
Add 6 carrots sliced, I like lots of carrots.
I quit using potatoes as I feel like they make the soup mushy.
Can of green beans with juice
Large can of tomatoes
Smallest can of corn
2 cups of chopped cabbage or coleslaw mix
Can add some tomatoe or V8 juice or additional beef stock/broth if you think needs more flavor or liquid
1/2 tsp thyme
1 tbsp McCormick’s Perfect Pinch Vegetable Seasoning
Vegetable seasoning to taste
1 tbsp sugar
Can add any other vegetables you like
Simmer for an hour or two. Sometimes tastes best next day after flavored mix.
