Cream Puffs
Made these for Luke’s birthday in 2024. Hadn’t made them in a LONG time. Everyone loved them.
Ingredients
1 c water1/2 c margaine/butter
1 c flour
4 eggs at room temperature
Instructions
Heat water & butter in saucepan to boiling. Add flour all at once & stir until the mixture becomes a ball. Remove from heat & beat in eggs one at a time. Drop by spoonfuls onto cookie sheet & bake 20 min at 400 degrees. Then lower temperature to 350 degrees for 20 minutes. NEVER open oven door during baking. This will cause cream puffs to flatten. When you remove the puffs from the oven, poke the top of each puff with a toothpick so will allow steam to escape from inside. Cool. Slice off top third of puff & scoop out inside. Fill w/filling.Filling:
1 - 1.4 oz pkg Jello regular or sugarfree vanilla instant pudding mix.
1 3/4 c whole milk
1/2 pkg. (8oz) regular or light cream cheese
1/2 tsp vanilla
Soffen cr cheese in microwave & beat into milk w/mixer. Add pudding, vanilla, mixing well. Let set up 5 min. Spoon into puff. Can add cool whip to above mixture.
Sometimes I whip 2 Cups heavy cream, add sugar to taste and 1 tsp of vanilla. I then fill puff first with pudding then add a dollop of whipped cream before returning the lid to the puff.
Also good by filling with homemade whipped cream only.
