Panfried Kale
Ingredients
1 large bunch kale3 tbsp olive oil
5-6 garlic cloves, finely minced
salt
pepper
Instructions
Thouroughly rinse the kale in cold water, soaking it in the water if it seems gritty or sandy. Tear the kale into chunks.Heat olive oil in large skillet over medium-high heat. Add the garlic and quickly stir it around to avoid burning. Throw in the kale.
use tonges to move it around the skillet. Sprinkle in plenty of salt and pepper. Continue cooking until slightly wilted but still a little crisp, about 2 min.
Remove the kale to a plate and serve it to get a healthy dose of beta carotene and vitamin K.
My dad liked to add kale added to mashed potatoes and then he sprinkled vinegar on top.
