Texas Caviar
Ingredients
1 can black-eyed peas, drained1 can pinto beans, drained
1 jar chopped pimentos
1 small onion, chopped
1 c celery, chopped
1 c green pepper, chopped
1 can white shoe peg corn
Instructions
Dressing:1 tsp salt, 1/2 tsp pepper, 1 tbsp water, 3/4 c cider vinegar, 1/2 c oil, 1 c sugar.
Boil, cool, pour over veggies. Drain before serving.
Serve with Big Scoop tostido chips.
