Mint 'N Peas
Ingredients
1 cup water
2 tablespoons sugar
1 teaspoon dried mint
1/2 teaspoon salt
few drops of lemon juice
20 ounces of frozen peas
1 tablespoon butter
Instructions
Bring water, sugar, mint, salt and lemon juice to a boil. Add peas, breaking up frozen clumps with fork. When boil resumes, cover and simmer gently 3 to 4 minutes until just tender. Drain, stir in butter and serve hot. The peas will appear to not have enough water when you first add them to the boil, but the frozen peas will thaw and add more water to the mixture. 12 Servings.
