Vanilla Buttermilk Cupcakes
This is a very dense cupcake with countless icing and decoration possibilities.
Ingredients
6 tablespoons butter, at room temperature
1 cup plus 2 tablespoons sugar
2 large eggs
1 teaspoon vanilla
2 cups all-purpose flour
2 teaspoons baking powder
1/2 teaspoon salt
2/3 cup buttermilk
Instructions
Preheat oven to 350 F and line a 12 cup muffin tin with paper liners. In a mixing bowl, combine butter and sugar at medium speed until well blended. Add eggs and vanilla, beating on high until well blended. In a separate bowl, combine flour, baking powder, and salt. With the mixer on low speed add flour mixture and buttermilk to butter mixture, alternating in thirds. When all of the flour is combined, beat mixture on medium speed until well blended. Fill muffin cups, dividing batter equally among tins. Bake for 20 to 25 minutes or until the top of cupcake springs back when lightly touched in the center. Cool on racks for 5 minutes, then remove from pan. Cool completely before icing or decorating. Makes 12 servings.
