Quick Crustless Fudge Pie
Ingredients
4 tablespoons sweet butter
12 ounces semisweet chocolate chips
1/4 cup dark rum
2 teaspoons instant coffee powder
3/4 cup brown sugar, packed
3 eggs
1/4 cup flour
1 cup coarsely chopped walnuts
1/2 cup chopped walnuts for topping
Instructions
Preheat oven to 350 F. Grease a 9" glass pie plate. In a 2 quart glass bowl, combine butter and chocolate chips. Heat in a microwave oven for 75-105 seconds, until mixture is melted and smooth when stirred. Stir in rum, coffee powder, brown sugar, eggs and flour. Mix until smooth and well blended. Stir in one cup of coarsely chopped walnuts. Turn batter into prepared pie plate. Sprinkle 1/2 cup of chopped walnuts on top. Bake for 25-30 minutes or until puffed. Pie should still be moist inside. Do not overbake. Let pie cool to room temperature before serving, and top with whipped cream. Makes 8 servings.
