Chocolate Pie Crust
Tried 1/2 teaspoon of cream of tartar today to see if that makes a difference. Tablespoon of sugar helps as well.
Ingredients
2 cups flour1/4 cup cocoa
3/4 teaspoon salt
1/2 cup shortening
2 tablespoons butter, well chilled
8-10 tablespoons water, well chilled
Instructions
Sift flour, cocoa and salt in mixing bowl. Cut shortenng and butter into 4 or 5 pieces and drop into bowl. Mix at low speed with an electric mixer or until mixture resembles small peas, about 30 seconds.Add water, 1 tablespoon at a time, until all particles are moistened. Use only enough water to make pastry form a ball. Watch dough closely as overmixing will result n a tough crust.
Chill iin refrigerator for 15 minutes. Roll into pie crust 1/8 inch thick. Yields two 8 or 9 inch single crusts or one 8 or 9 inch doulbe crust.
For baked pastry shell, prick sides and bottom with fork. Bake at 450 F for 8 to 10 miinutes. Cool completely before filling.
