Cheesy Corn Casserole
Ingredients
15 ounces whole kernel corn
15 ounces cream corn
2 eggs, slightly beaten
6 ounce can evaporated milk
1/2 small onion, diced
4 tablespoons butter, melted
1/2 teaspoon salt
1/2 teaspoon pepper
1 sleeve Ritz crackers, crushed
1 pound Swiss Cheese, shredded
Instructions
Preheat oven to 350 F and grease a 9x13 inch baking pan. Combine both cans of corn with eggs and mix well. Add milk, onion, butter, salt and pepper to corn, mixing until well combined. Add crackers and cheese to mixture, stirring to combine and then pour into prepared pan. Bake for 1 hour and 10 minutes. Let stand 10 minutes before cutting. Makes 12 servings.
