Ham and Cheese Casserole
Ingredients
3 potatoes, peeled and cubed
1 carrot
2 ribs celery
3 cups water
2 cups ham, cooked and cubed
1 red pepper, diced
1 small onion, diced
7 tablespoons butter, divided
1 1/2 cup milk
3/4 teaspoon salt
1/4 teaspoon white pepper
1 cup Cheddar Cheese, shredded
1/2 cup Ritz Crackers, crumbled
Instructions
In a medium saucepan, bring the potatoes, carrot, celery and water to a boil. Reduce heat, cover and cook for about 15 minutes or until tender and then drain. In a large saucepan, saute the ham, red pepper and onion in 3 tablespoons butter until tender. Add the potato mixture to the ham mixture and combine. Transfer the ingredients to a grease 1 1/2 quart baking dish. Preheat oven to 375 F. In the large saucepan, melt the remaining butter, stir in flour (how much?) until smooth. Gradually add milk, salt and pepper. Bring the mixture to a boil, cook and stir for 2 minutes or until thickened. Reduce heat, add cheese and stir until melted. Pour over the ham mixture, then sprinkle with cracker crumbs. Bake for 25-30 minutes or until heated through. Makes 6 servings.
