Smoked Stuffed Jalapenos
Ingredients
12 Jalapeno peppers
4 oz cream cheese, softened
4 oz cheddar cheese, shredded
1 tbsp roasted red pepper
2 tsp BBQ Rub, divided
12 slices bacon
Instructions
Preheat oven to 350 F. Cut the tops off of the peppers, halve them and scrape out the seeds and the veins. In a mixing bowl, combine the cream cheese, cheddar cheese, red pepper and 1 tsp of the BBQ rub. Mix at medium speed of an electric mixer until thoroughly combined. Stuff the cheese mixture into the pepper halves, filling them level to the top. Cut the bacon strips in half and wrap each pepper half with a strip of bacon, securing it with a toothpick. Place on a baking sheet and sprinkle the other half of the BBQ rub over the peppers. Bake for 25 to 30 minutes or until bacon is crisp and done. Makes 12 servings.
