Southern Style Oven Fried Chicken
Ingredients
4 chicken breasts
1/2 cup flour
1/4 teaspoon salt
1/8 teaspoon Cayenne Pepper
3 ounces buttermilk
3/4 cup cornflake crumbs
Instructions
Preheat oven to 365 F. Lightly coat an 8 x 8 baking dish with cooking spray and set aside. Combine flour, salt and cayenne pepper together in a medium bowl. Place buttermilk and cornflake crumbs in separate shallow bowls. Roll chicken breasts in flour mixture, coating evenly on both sides. Next dip chicken into buttermilk and then dredge in cornflake crumbs. Place coated chicken breasts in prepared baking dish. Bake for 20 minutes or until chicken is tender and no longer pink. Makes 4 servings.
