Scrambled Egg Muffins
These are a delicious morning treat, and they freeze very well. We normally double the recipe and use the whole pound of ground sausage.
Ingredients
1/2 pound pork sausage
12 eggs
1/2 cup onion, chopped
1/4 cup green pepper, chopped
1/2 teaspoon salt
1/4 teaspoon pepper
1/4 teaspoon garlic powder
1/2 cup cheddar cheese, grated
Instructions
Preheat oven to 350 F and grease a 12 cup muffin tin. In a skillet, brown the sausage and drain. In a mixing bowl, beat the eggs. Add the onion, green pepper, salt, pepper, and garlic powder to the egg mixture. Stir in sausage and cheese, mixing well. Spoon into prepared muffin cups, dividing the mixture evenly among the twelve cups. Bake for 20-25 minutes or until a knife inserted near the center comes out clean. Makes 12 servings.
