Honey Corn Muffins
Ingredients
2 eggs
1/4 cup honey
1/4 cup butter, melted and cooled
1 cup buttermilk
1 1/4 cups yellow cornmeal
3/4 cup all purpose flour
1 tablespoon baking powder
1/4 cup brown sugar
2 tablespoons sugar
1 teaspoon salt
Instructions
Preheat oven to 400 F. Spray muffin tin with nonstick spray. In a small bowl, whisk the eggs, honey, butter and buttermilk together. In a large bowl, combine cornmeal, flour, baking powder, sugars and salt together. Make a well in the dry ingredients, and then pour wet ingredients into the dry mixture and fold to combine. Fill tins about 3/4 full and tap muffin tin on counter to level batter. Bake for 12 to 15 minutes or until set. Let cool for 10 minutes then remove from muffin tin. Makes 12 servings.
