Honey Oat Quick Bread
Ingredients
2 tablespoons old-fashioned oats, divided
1 1/3 cups whole wheat flour
1 cup all-purpose flour
2 1/4 teaspoons baking powder
1/4 teaspoon baking soda
1 1/4 teaspoons salt
1 cup old-fashioned oats
1 cup nonfat plain yogurt
1 egg
1/4 canola oil
1/4 cup honey
3/4 cup nonfat milk
Instructions
Preheat oven to 375 F. Generously coat a 9x5 inch loaf pan with cooking spray. Sprinkle 1 tablespoon oats in the pan, coating the sides and bottom with the oats. Stir together flours, baking powder, baking soda and salt in a large bowl. In a separate bowl, combine 1 cup oats, yogurt, egg, oil, and honey, stirring with a fork until well blended. Stir in milk. Gently stir the yogurt mixture into the flour mixture until thoroughly blended, but avoid overmixing. Scrape the batter into the prepared pan, spreading evenly to the edges. Sprinkle the remaining 1 tablespoon of oats over the top of the loaf. Bake for 40 to 50 minutes or until a toothpick inserted in the center comes out clean. It is normal for the top to crack. Remove from oven and let cool on a wire rack for 15 minutes. Run a knife around the edges of the pan and turn the loaf out onto the wire rack. Let cool for 45 minutes or until barely warm. Make 12 servings.
