Mer's Raw Apple Cake
Ingredients
3/4 cup shortening
1 cup sugar
1 cup brown sugar
2 large eggs
1 teaspoon vanilla
2 1/2 cups all purpose flour
2 teaspoons cinnamon
1 teaspoon baking powder
1 teaspoon baking soda
1/2 teaspoon salt
1 cup buttermilk
2 apples - peeled, cored and diced
1/2 cup sugar
1 tablespoon flour
1/2 teaspoon cinnamon
1/3 cup butter
1/2 cup pecans, chopped
Instructions
Preheat oven to 300 F. Grease a 9x13 inch baking pan. Cream the shortening and the sugars in a large mixing bowl. Add egg and vanilla, mixing until well blended. In a medium bowl, sift flour, cinnamon, baking powder, baking soda and salt. Add flour mixture to the sugar mixture, alternating with buttermilk until mix is smooth. Stir in apples. Pour into prepared pan. To prepare crumb topping, mix sugar, flour and cinnamon in a small bowl. Cut butter into dry ingredients and mix until crumbly. Stir pecans into mixture and evenly sprinkle crumb topping over the cake. Bake for 1 hour or until cake tests done. Makes 20 servings.
