5 Ingredient Beef Enchilada Casserole
Ingredients
8 8 inch flour tortillas
1 pound ground beef
10 oz can red enchilada sauce
16 oz jar black bean and corn salsa
8 oz shredded Mexican four-cheese blend
Instructions
Preheat oven to 350 F, and spray 9 x 13-inch baking dish with no-stick cooking spray. Fold tortillas in half, and place folded side down in the prepared dish, and set aside. Cook ground beef in a 10-inch nonstick skillet over medium-high heat until no longer pink, then drain. Transfer meat to a large bowl, and add 1/4 cup enchilada sauce, salsa, and 1 cup cheese, stirring to combine. Divide beef mixture evenly among tortillas. Wrap tortillas around beef filling, and place seam side down in dish. Top enchiladas with remaining sauce and remaining cheese. Spray a large sheet of foil with cooking spray, and cover the dish with the sprayed side down. Bake 40 to 45 minutes or until hot and bubbly. Makes 8 servings.
