Chilies Rellenos Casserole
Ingredients
6 slices bread
butter, softened
2 cups Cheddar Cheese, shredded
2 cups Monterey Jack Cheese, shredded
4 oz can green chili peppers, chopped
6 large eggs
2 cups milk
2 teaspoons salt
2 teaspoons paprika
1 teaspoon oregano
1/2 teaspoon black pepper
1/4 teaspoon garlic powder
1/4 teaspoon dry mustard
Instructions
Preheat oven to 325 F. Spread butter on one side of bread slice and then trim crusts. Place buttered side down in an 11 x 7 baking dish. Top with cheeses and sprinkle with chilies. Beat eggs until frothy, then add remaining ingredients to eggs mixture, mixing well. Pour egg mixture over bread slices. Cover and chill overnight or for at least 4 hours. Uncover and bake for 50-55 minutes or until slightly browned. Let stand 10 minutes before serving. Makes 6 servings.
