Spicy Grilled Shrimp
This is a great recipe for shrimp. I was not brave enough to cook directly on the grate, but if you have enough confidence in your grill, feel free to give it a go.
Ingredients
1 garlic clove
1 tablespoon coarse salt
1 teaspoon paprika
1/2 teaspoon cayenne pepper
2 tablespoons olive oil
2 teaspoons lemon juice
2 pounds large shrimp, peeled and deveined
8 lemon wedges for garnish (optional)
Instructions
Preheat grill for medium heat. In a small bowl, crush the garlic with the salt. Mix in paprika and cayenne pepper, then stir in olive oil and lemon juice to form a paste. In a large bowl, toss the shrimp with the garlic paste until evenly coated. Lightly spray a sheet of aluminum foil and place over the grate. Place the shrimp on a skewer and cook shrimp for 2 to 3 minutes per side, or until opaque. Transfer to a serving dish and garnish with lemon wedges. Makes 6 servings.
