Buttermilk Brownies
Ingredients
2 cups all-purpose flour2 cups sugar
1 teaspoon baking soda
1/4 teaspoon salt
1 cup water
1 cup butter
1/3 cup unsweetened cocoa powder
2 eggs
1/2 cup buttermilk
1 1/2 teaspoons vanilla
1/4 cup butter
3 tablespoons unsweetened cocoa powder
3 tablespoons buttermilk
2 1/4 cups powdered sugar
1/2 teaspoon vanilla
3/4 cup pecans, chopped
Instructions
Preheat oven to 350 F. Grease a 10x15x1 inch pan or a 9x13x2 inch pan and set aside. In a mixing bowl, combine flour, sugar, baking soda, and salt. In a medium saucepan, combine water, butter, and cocoa powder. Bring mixture to a boil over medium heat, stirring constantly. Remove from heat and add to the flour mixture. Beat with an electric mixer on medium speed until combined. Add the eggs, buttermilk, and vanilla. Beat at medium speed for one minute and then pour batter into prepared pan. Bake 25-30 minutes for the 10x15 pan or 35-40 minutes for the 9x13 pan, or until a wooden toothpick inserted in center comes out clean.For icing, in a medium saucepan combine butter, cocoa powder, and buttermilk. Bring mixture to a boil and then remove from heat. Add powdered sugar, vanilla, and pecans to cocoa mixture. Beat with an electric mixer on medium to high speed until smooth. Pour warm frosting over warm brownies, spreading evenly. Cool completely in pan on a wire rack, then cut into bars. Makes 24 servings.
