Mexican Casserole
Ingredients
1 pound ground beef
1 onion, chopped
1 can Ranch Style Beans
1 can Cream of Chicken Soup
1 package Taco Seasoning
1 can of Ro-Tel Tomatoes
1/2 cup water
12 to 14 oz bag of Corn Tortilla Chips
2 cups shredded cheese
Instructions
Preheat oven to 350 F. Spray a 9 x 13 inch pan with no stick cooking spray and set aside. Brown ground beef, adding onions when meat is halfway done. Drain and return meat mixture to pot. Add beans, soup, taco seasoning, Ro-Tel tomatoes and water to meat and bring to a simmer. Layer chips in prepared pan. Pour meat mixture over chips and sprinkle cheese on top. Cover with foil and bake for 25-30 minutes. Can be served with sour cream and salsa if desired. Makes 8 servings.
