Chicken Dijon
Ingredients
4 ounces plain yogurt
1/4 cup dijon mustard
8 chicken breasts
1/2 cup seasoned breadcrumbs
Instructions
Preheat oven to 400 F. Combine yogurt and mustard, until well blended. Brush chicken breasts with yogurt mixture, and dredge in breadcrumbs. Arrange chicken in a baking dish coated with cooking spray. Cover and bake for 30 minutes. Increase temperature to 450 F, uncover and bake for 15 more minutes or until chicken is done and coating is browned. Makes 8 servings.
