Spicy Molasses Baked Beans
Ingredients
1 cup onion, chopped
1 jalapeno pepper, seeded and minced
2 15.5 oz cans Great Northern Beans
1 15.5 oz can Pinto Beans, drained
1/2 cup ketchup
1/2 cup water
3 tablespoons brown sugar
3 tablespoons molasses
2 tablespoons yellow mustard
1 teaspoon chili powder
1/2 teaspoon liquid smoke
Instructions
Preheat oven to 350F. Coat a nonstick skillet with cooking spray and place over medium-high heat until hot. Add onion and jalapeno pepper to skillet, sauteeing for 2 minutes or until tender. Combine onion mixture and remaining ingredients in a large bowl, stirring until mixed well. Spoon bean mixture into a greased 2-quart casserole dish. Bake for 1 hour or until thick and bubbly. Makes 12 servings.
