Lasagna Rollups
This recipe can be easily doubled or tripled to suit the crowd.
Ingredients
4 Lasagna Noodles
1/2 pound ground beef
1/2 teaspoon salt
1/4 teaspoon black pepper
1/2 teaspoon garlic salt
1 teaspoon minced onion
1/2 cup Ricotta Cheese
1/2 cup Parmesan Cheese
1 egg
1 cup and 4 tablespoons of spaghetti sauce, divided
1/2 cup Mozarella Cheese
Instructions
Cook lasagna noodles according to package directions. Once cooked, rinse and drain. Lay noodles on paper towels, allowing them to dry completely. Brown ground beef with salt and pepper. Drain and add 1/2 cup spaghetti sauce, then simmer until bubbling. Combine garlic salt, minced onion, Ricotta Cheese, Parmesan Cheese, and egg. Preheat oven to 350 F and coat an 8x8 baking dish with cooking spray. Pour remaining spaghetti sauce evenly over bottom of prepared pan. Take 1/4 cup of cheese mixture and spread evenly over each noodle. Spread a small amount of sauce over ricotta mixture. Roll noodles carefully and place seam side down into prepared baking dish. If you have any cheese mixture or meat mixture left, place on top of noodles. Place a tablespoon of spaghetti sauce over each noodle. Sprinkle Mozzarella Cheese evenly over noodles. Cover dish with aluminum foil and bake for 35 minutes. Makes 4 servings.
