Bourbon Glazed Pork Chops
This recipe is a little bit of work, but it turns out fantastic.
Ingredients
4 pork chops
4 strips bacon, cooked and diced
salt
pepper
garlic powder
1/3 cup molasses
1/4 cup bourbon
3 tablespoons dijon mustard
Instructions
Preheat oven to 400 F. Line a large baking sheet with foil. In a large skillet, fry the bacon strips. Drain the bacon on paper towels and dice, reserving the drippings. In a small saucepan, combine the molasses, the bourbon, and the mustard. Bring to a boil over medium-high heat. Reduce heat to medium-low and boil for about 10 minutes or until there is about 1/2 cup of reduced glaze. Pat pork chops dry and sprinkle with salt, pepper, and garlic powder. Brown pork chops in reserved bacon drippings for about 8 to 10 minutes on each side. Place browned chops on the prepared baking sheet. Pour 1 tablespoon of the glaze over the pork. Bake pork chops for 10 to 15 minutes in preheated oven. Remove chops from oven and drizzle with additional glaze, and top with diced bacon. Makes 4 servings.
