Twice Baked Potato Casserole
4 cups mashed potatoes
1/2 pound bacon, cooked and crumbled
8 ounces cheddar cheese, grated and divided
2 green onions, diced
1 cup sour cream
Preheat oven to 350 F. In a bowl, mix the potatoes, bacon, 6 ounces of the cheddar cheese, green onions and sour cream together until well blended. Season as needed with salt and pepper. Scoop mixture into a greased medium casserole dish. Sprinkle remaining cheese on top of potatoes. Bake uncovered for 30 minutes or until hot and bubbly. Makes 6 servings.
