Sticky Pecan Pie Bars
Ingredients
1 box yellow cake mix
1/2 cup butter, melted
1 large egg
3/4 cup dark corn syrup
1/4 cup light brown sugar
2 large eggs
1 teaspoon vanilla extract
1 1/2 cups chopped pecans
Instructions
Preheat oven to 350 F. Combine cake mix, melted butter and egg in a large mixing bowl. Blend on low speed for 2 minutes. Batter will be a thick dough. Press batter into an ungreased 13x9 inch pan, covering the bottom and 1/2 inch up the sides of the pan. Bake the crust for 20 minutes. Prepare the filling by mixing the corn syrup, brown sugar and vanilla in the same mixing bowl for 1 minute. Scrape down the sides and then fold in the pecans until well combined. Pour the filling over the baked crust so that the filling covers the entire surface. Bake the bars for 22-25 minutes until filling is set. Remove from oven and cool on a wire rack for 30 minutes. Makes 24 servings.
