Butternut Squash Bake
Ingredients
3 pounds butternut squash, peeled and deseeded
4 tablespoons butter
1 cup sour cream
1/4 cup onions, finely chopped
1/4 cup Parmesan cheese
2 eggs, beaten
1/2 teaspoon salt
1/4 teaspoon allspice
1/4 teaspoon pepper
1/2 cup Ritz crackers, crushed
Instructions
Preheat oven to 350 F. Spray a casserole dish with nonstick coating spray and set aside. Cut the squash into 2 inch pieces and place in a medium saucepan. Cover with water and boil for about 15 minutes or until squash is soft. Drain and shake off all excess water. Place squash into a mixing bowl, and mash with butter, sour cream, onion and Parmesan cheese. Briskly stir in the beaten eggs. Add the salt, allspice and pepper and stir well. Pour mixture into the prepared casserole dish, and sprinkle with crushed crackers. Bake for 45 minutes. Makes 8 servings.
