Crooks Cheese Grits
Ingredients
4 cups water
1 cup grits
1/2 teaspoon salt
1 cup sharp cheddar cheese, grated
1/2 cup Parmesan Cheese
pinch of white pepper
pinch of cayenne pepper
pinch of nutmeg
2 tablespoons butter
Instructions
Bring the water to a rolling boil. Slowly stir in the grits. Reduce heat to medium and continue cooking, stirring frequently, for 20 minutes. When grits are thick and tender, stir in the salt and butter. Stir in the cheeses and the remaining spices, adjusting seasonings to taste. Makes 4 servings.
