Candy Bar Cupcakes
Ingredients
1 cup sugar
1 cup buttermilk
1/4 cup canola oil
1 teaspoon vanilla extract
1 1/2 cups flour
1/3 cup cocoa powder
1 teaspoon baking soda
1/2 teaspoon salt
6 ounces cream cheese
2 tablespoons Confectioners sugar
1 egg
2 Snickers candy bars, 2 oz. each, chopped
1/3 cup butter, cubed
1/3 cup brown sugar
3 tablespoons milk
1 1/2 cup Confectioners sugar
Instructions
In a large bowl, beat the sugar, buttermilk, oil, and vanilla until well blended. in a separate bowl, combine the flour, cocoa, baking soda, and salt. Gradually beat into the sugar mixture until well blended. For filling, in a small bowl, beat cream cheese and confectioners sugar until light and fluffy. Add egg, mixing well, and stir in candy bars. Fill 18 paper lined muffin cups 1/3 full with batter. Drop filling by tablespoonfuls into the center of each cup. Bake at 350 for 20 to 25 minutes or until cupcakes test done. Cool for 10 minutes before removing from pans to a wire rack to cool completely. For frosting, in a small saucepan, melt butter. Stir in brown sugar and bring to a boil. Cook for 2 minutes, stirring occasionally. Remove from heat, stir in milk, then confectioners sugar. Cool until frosting reaches spreading consistency and frost cupcakes. Makes 18 servings.
