Roasted Sweet Potato Wedges
Ingredients
16 ounces sweet potatoes
1 teaspoon olive oil
1/2 teaspoon curry powder
1/4 teaspoon salt
1/4 teaspoon ground cumin
1/8 teaspoon ground cloves
1/8 teaspoon pepper
Instructions
Preheat oven to 425 F. Cut sweet potatoes in half lengthwise, and then cut each half into 4 wedges. Combine remaining ingredients in a bowl and then add potatoes, tossing gently to coat evenly. Place wedges on a baking sheet without overlapping. Bake for 25 minutes or until tender. Yields 4 servings.
