Chicken Noodle Casserole
Ingredients
12 ounces medium egg noodles
1 can Cream of Chicken soup
2 tablespoons lemon juice
1/2 cup mayonnaise
2 cups chicken, cooked and cubed
1 onion, chopped
1/4 cup green bell pepper, chopped
1/4 cup red bell pepper, chopped
1 cup Monterey Jack Cheese, shredded and divided
1 cup Cheddar Cheese, shredded and divided
Instructions
Preheat oven to 350 F. Cook noodles according to package directions. In a large mixing bowl, combine soup, lemon juice and mayonnaise. Add the chicken, onion, peppers, 1/2 cup of Monterey Jack Cheese, 1/2 cup Cheddar Cheese to the mixture and blend well. Add the noodles and toss to coat. Transfer mixture to a greased 2 quart casserole baking dish. Bake for 30 minutes, then sprinkle top with remaining cheeses and bake an additional 10 minutes or until cheeses are evenly melted.
